Observation (CORRECTED DURING INSPECTION): Barbecue salmon skin for sushi rolls was stored in an insert infront of the grill; this location is not temperature controlled. Internal temperature of salmon skin was 19.4 degrees Celsius. This is a repeat violation and a ticket will be issued.

Observation (CORRECTED DURING INSPECTION): Numerous cleaning cloths were observed on the food prep counters for the sushi bar and the cooking line. No trace of sanitizer were on the cloths. Keep your cloths saturated with sanitizer at all times. This is a repeat violation. Violation ticket to be issued.

Observation (CORRECTED DURING INSPECTION): Several inserts of dirty, tepid water were observed on the sushi prep line. This is a repeat violation. Use your hand sinks for washing and rinsing hands, not finger bowls.
