Observation (CORRECTED DURING INSPECTION): Dried tea stains observed on the wall of ice holder located at the serving area.
Corrective Action(s): Clean and sanitize the ice holder. Discard the current ice stored inside.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. Sanitizing pail in the kitchen measured with a bleach concentration of less than 50 ppm. 100-200 ppm is required as a proper food surface sanitizer.
2. Food sanitizer not available at the serving area.
Corrective Action(s): 1. Add bleach into the pail to increase to bleach concentration to 100-200 ppm. Ensure wiping clothes are stored inside when not in use. The dilution factor for bleach sanitizer is: 1 teaspoon of bleach to 1 liter of water.
2. Prepare food sanitize for the serving area such as 100-200 ppm bleach.

Observation (CORRECTED DURING INSPECTION): Liquid hand soap and single-use paper towels not available at the staff washroom hand washing station.
Corrective Action(s): Obtain liquid hand soap and single-use paper towels for the aforementioned hand washing station.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1. A bag of raw meat was stored with bags of raw vegatables inside the walk-in cooler. Meat juices not observed to be leaked.
2. 3 cans of methanol fuel were stored beside food products at the dry storage area.
Corrective Action(s): 1. Raw meat must be stored separately from raw vegatables and ready-to-eat food to protect them from possible meat juice contamination. Move the bag of raw meat to the lowest shelf in the walk-in cooler.
2. Chemical must be stored separately from food. Move methanol fuel to a different location away from food.

Observation: Grease and food debris build-up observed on the floor under the cooking units. Black grease build-up also observed on teh filter of the exhaust canopy.
Corrective Action(s): Clean the aforementioned area. Follow your sanitation plan for regular cleaning schedule. Correct by: today.

Routine inspection:
- Coolers (walk-in, stand-up, prep) maintained at 4C or less.
- Freezers (walk-in, stand-up) maintained at -18C or less.
- Hot food hot held above 60C.
- Kitchen and serving area hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- High temperature dishwasher in the kitchen registered 71C at the plate level. Operator to monitor the dishwasher temperature and call service if required.
- Low temperature dishwasher at the serving bar measured with 50 ppm bleach sanitizer.
- Ice machine and deli slicer maintained in sanitary condition.
- Food stored off the ground and organized.
- No pest activities observed at the time of inspection.
- Ensure to keep temperature records for all refrigeration units on a daily basis.
