Observation (CORRECTED DURING INSPECTION): Low temp dishwasher noted 0 ppm chlorine at the dish. Sanitizer not dispensing. Sanitizer jug near full.
Corrective Action(s): Ensure low temp dishwasher is able to sanitize at 50 ppm chlorine at the dish. Repair unit. Owner has contacted technician who will be in tomorrow morning.
Until unit is repaired manual sanitizing step must be taken.
1. Wash and rinse dishes in dishwasher
2. sanitize dishes in 2 comp sink in 100 ppm chlorine or 200 ppm QUATS for 2 minutes in warm water.
3. Air dry.
