Observation (CORRECTED DURING INSPECTION): Gravy sauce stored in an 8 quart plastic container (full) was left at room temperature for cooling in the kitchen. Internal temperature was measured at 47.4C. Storing such a large volume of gravy in a deep container makes it difficult for the food to cool quickly
Corrective Action(s): Divide the gravy sauce into smaller portions to facilitate faster cooling. Ensure potentially hazardous foods such as gravy is cooler from 60C to 20C within 2 hrs, and from 20C to 4C within 4 hrs to minimize/prevent growth of potentially harmful organisms.

Observation (CORRECTED DURING INSPECTION): Gravy sauce in hot holding unit measured at 55.1C. According to staff, sauce was stored in the unit since morning (over 4 hrs), and temperature was not monitored throughout the day.
Corrective Action(s): Staff discarded the noted tray of gravy sauce once it was brough to their attention. Ensure hot held foods are maintained at or above 60C.

- Ice machine is clean and maintained
