Operator informed that those towels/rags are used for cleaning and sanitizing and not for wiping hands

Observation: During time of inspection:
1) Mice droppings were found in dry goods storage area at the very end, beneath the stairs
2) Hard to reach areas in need of cleaning (behind freezer, underneath shelving, etc)
3) Metal slats on commercial ventilation fume had moderate grease accumulation
Corrective Action(s): 1) Ensure to remove droppings and clean and sanitize area
2) Ensure to clean all hard to reach areas in addition to daily maintenance of facility
3) Ensure to degrease and clean metal slats and maintain on a regular basis (professional cleaning also due Jan 2017)

- No evidence of pests detected during time of inspection
