- Vast improvement of general sanitation has been observed. >>> However, racks and shelving in the walk in cooler can still be more thoroughly cleaned. >>> Grease and grime observed on the underside of the racks/shelving >>> Dust/mold still observed on the lower edge/lip of the cooling unit - Ice machine now observed clean and sanitize - Scoop handle observed not in ice - No double stacking observed in the insert level of the prep cooler - High touch surfaces are notably cleaner, no longer have a sticky residue >>> Please frequently clean and sanitize high touch surfaces.
