Followup inspection to Rpt # VCHN - B56Q8Y:

Food Quality Check Sample results obtained and imitation crab meat with mayo sample tested 1100 MPN (per gram) which is unsatisfactory.
Copy of results given to operator.
Discussed significance of results with operator. Presence of fecal coliforms indicates recent contamination and there is a greater risk that pathogens may also be present.

The following was reinforced:

Hand wash thoroughly with warm water and liquid soap. Towel dry using single use paper towels.
Clean and sanitize all food contact surfaces using your 100ppm bleach sanitizer solution.
Avoid cross contamination.

Note: sushi preparation area where imitation crab is stored/handled is in the same area where fresh vegetables are processed/handled. As discussed above clean and sanitize all food contact surfaces on a frequent basis.

Note: crab meat is vacuum packaged, received refrigerated and stored in the cooler at or below 4 degrees C. 1 tub imitation crab meat with mayo prepared daily. Reminder to store this product in the fridge at all times. Small quantities may be stored at room temperature but any left over after 2 hours must be discarded.
