Observation: Multiple dead catches of mice found throughout the premises;
-1 caught in snaptrap in dry storage
-10+ caught in tin cat underneath food prep sink
-3 mice caught in tin cat beside deep fryer

Also; fruit flies noted in dry storage room, especially around onions

mice droppings observed in dry storage as well as underneath the dishwasher in the kitchen
Corrective Action(s):
=Contract pest control company immediately and conduct an inspection of the facilities. All traps must be cleaned or replaced and reset. Operator must provide evidence of routine servicing contract minimum monthly.
=provide fruit fly controls in the dry storage
=remove the mice droppings and clean hard to reach areas in the kitchen thoroughly

Observation: Shredded insulation found in the walk-in cooler, specifically along wall with piping adjacent to the walk-in freezer entrance.
Corrective Action(s): Remove the shredded insulation and clean area.
Fill gaps and holes in the area to prevent pest entrance.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: REPEAT OBSERVATION: heavy grease and food debris build up observed in the following areas;
-on FRP wall at the end of the grill line
-underneath equipment on the grill line (both along the wall and underneath the prep coolers
-along the wall in the walk-in cooler adjacent to the walk-in freezer
-floors and racks in the dry storage unit
-portable cart beside the deep fryer
-underneath the counters tops along the dishwasher
-underneath the counter tops with the handsink and food prep sink
Corrective Action(s): Correction Order issued for repeat issues regarding general sanitation.

Clean the above noted areas immediately
Complete necessary actions as per issued Correction Order
Provide an updated cleaning schedule to your district inspector

Failure to maintain the premises in a sanitary manner will result in the issuance of fines and/or closure orders

=Both prep cooler units in the kitchen found to be pooling water in the bottom compartments
=dry storage shelving units <6 inches off of the floor
Corrective Action(s):
=Have a technician service the cooler. Cooler must not be pooling water within the unit.
Also, clean the bottom compartment thoroughly to remove mildew build up, and sanitize completely.
=adjust dry storage shelving units to be minimum 6 inches off of the floor

=Walk-in cooler (3C), prep coolers (4C and 2C), and bar cooler (4C) measured < 4 degrees C. small mini fridge in kitchen only used for storage of non-potentially hazardous salad dressings.
=undercounter freezer (-10C) and walk-in freezer (-19C) measured < -18 degrees C
=taco meat hot holding (76C) and gravy hot holding (88C) measured >60 degrees C
=Low temperature dishwasher measured >50 ppm chlorine at the plate surface
=Bar area glasswasher measured >12.5 ppm iodine at the glass surface
=Sanitizer solution at 200 ppm QUATS available in spray bottles
=Dedicated prep sink available for food preparation
=Ice machine and deli slicer was maintained in a sanitary manner
=Staff hygiene was satisfactory at the time of inspection; staff FOODSAFE certification verified. Discussed FOODSAFE certification expiry.
=Permit posted in a conspicuous location, however permit out of date. Fraser Health Authority to provide new permit.
