A follow-up inspection was conducted, the following observations were made:
- Manual warewashing occurring and staff using the 3-compartment sink method.
- Quats sanitizer concentration was 200ppm in the 3rd sink.
- Drain plugs present for all 3 sinks.
- Dishwasher drain pipe was removed and capped from the grease interceptor.
- Dishwasher water pipe was removed from main water line.
- All disposable dishes used to serve food to customers.
- Hot holding unit storing cooked bacon, onions and mushrooms was above 60C. Staff are aware that the unit is to remain 'on' at all times regardless of how hot the food gets.

Items that still require completion:
1) Peel off the protective plastic from the new sink. Staff are aware of this.
2) Secure and seal the new sink to the wall to prevent damage to the drain pipes, and to prevent water damage to the walls.
3) Permanently install and seal a stainless steel "bridge" between the 2nd and 3rd sink to prevent water from dripping and pooling on the floor between the two sinks.
