Premises was preparing for dinner - Large party has booked restaurant for for special occasion reservation.
All hand wash stations with exception of two compartment sink had soap, paper towel, hot and cold running water. See violation code 401 re: paper towel.
All coolers 4C or less (walk in, under counter, bar, prep cooler...etc)
Freezers - 18C or less.
General sanitation satisfactory. No obvious sign of pest activity noted at time of inspection.
Screen door was closed over open back door at time of inspection.
Meat slicer appeared clean at time of inspection.
Ice machine appeared clean with scoop for ice stored in holder.
Bleach available on site. 100ppm chlorine sanitizer available in container near the dishwashing machine. See violation code 302 re: sanitizer within the food preparation area.
High temperature dish washer achieved 76.9C (with min/max thermometer)
All foods stored foods appeared protected (ie. covered, off the ground, raw meats stored separate from ready to eat foods, light covers/sleeves installed...etc).
Note: One light bulb in kitchen is burned out. This does not affect the overall lighting in the kitchen at this time. **Repair/replace light bulb as needed.** |
