Observation: Remove tape from display cooler unit cafe door, corrugated sheets and duct tape on walk in cooler unit shelves and towel hanging from side of display case cooler unit.

Comments

Inspection conducted to grant health approval for owner change.
-All coolers (walk in, display cases x 3, upright sliding 2 door...etc) all <4 deg. C
-Sliding 2 door freezer -16 deg. C
-Good general sanitation. No obvious sign of pest activity. Pest control contract in place.
-All foods stored off the ground & covered at time of inspection.
-Hand wash stations fully equipped with soap, paper towel and hot/cold running water.
*Note: careful not to obstruct with equipment*
-Bleach available on sink. *Obtain chlorine test strips*
-wiping cloths stored in 100 ppm chlorine sanitizer solution
-Reviewed manual ware washing procedures at time of inspection.
1) wash with detergent & water 2) rinse with clean water 3) sanitize with 100 ppm chlorine sanitizer 4) Air dry.
-Foods for retail sale labelled & appeared to be from approved sources
-Food Safety & Sanitation plan reviewed at time of inspection - make required revisions & submit for review -7 days
-meat slicer in use at time of inspection - to be taken apart & cleaned/sanitized once every 4 hours.
-Completed health application form & permit fee received at time of inspection.
