Observation: Clean dishware stored below food prep counter covered with food debris.
Correction: Cleaned, sanitized food equipment and utensils are to be stored in a sanitary location that protects them from contamination prior to their next use.
Comments

Food safety plan onsite and discussed with operator. Operator has agreed to revise Food Safety Plan to avoid cooling process for batches of food and prepare food in a cook serve / cook hot hold manner.

Potentially hazardous food items not observed stored at room temperature.

Food items hot held on stove, soup 83 C, steamer 73 C

Dishware observed in a sanitary manner. It is recommended dishes are stored on above counter shelving rather than under work counter.

Wiping rags in use stored in dilute bleach sanitizer, 100 ppm chlorine.

Kitchen handsink fully accessable.

Reviewed handwashing procedure and safe glove use.

Food items stored off the floor.

Food items observed covered or wrapped in protective packaging.

Raw meats stored below ready to eat food items.

Reviewed safe thawing procedure.

Grill canopy has been cleaned.

New upright freezer provided, -12 C
