Domestic cooler ambient air temperature at 3-4 degrees C. Accurate indicating thermometer placed inside for monitoring temperatures.
Temperature log sheet maintained and available for review.
3 compartment sink setup for manual warewashing. 100ppm bleach available for sanitizing dishes/utensils/dishes.
100ppm bleach available for use in spray bottle and container. Reminder to store wiping cloths in this solution when not in use.
Scoop for dispensing coating for chicken stored outside of dry product.
