Observation (CORRECTED DURING INSPECTION): Wiping cloths were found sitting on preparation tables. Utensils were stored in water >4 deg C on the line.
Corrective Action(s): Ensure all wiping cloths are stored in sanitizing solution or use new cloth each time and spray counter top with sanitizer and wipe Remove all utensils and wash in the dishwasher. Replace with clean insert and fill with ice water and change on a regular basis.

Observation: Some food items in the walk-in cooler were not covered.
Corrective Action(s): Cover all food items stored in the walk in cooler.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Discussed thawing procedures with kitchen staff. It was mentioned that wings are left overnight in the sink to thaw after being in the cooler.
Corrective Action(s): Discussed proper thawing method with staff. Do not thaw foods at room temperature. Thaw in walk-in cooler at least 2-3 days in advance so they are defrosted and ready to be prepared.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Areas in between equipment and underneath the dishwasher and dry storage area have debris build up and food particles. Vents above cooking area have dust/debris build up.
Corrective Action(s): Clean these areas thoroughly. Ensure there are no food particles left underneath equipment as they may be source of food for pests. Ensure to clean vents above cooking area when dust/debris starts to build up.

Hand sinks provided with constant supply of liquid soap and paper towels.
Bleach sanitizer measured 100 ppm.
Prep line coolers maintaining 4 deg C or colder.
Walk-in cooler was at 3-4 deg C.
Walk-in freezer was at -18 deg C.
Temperature log was available. Ensure to put the correct date on the log. Log was one day ahead. Skipped one day 3 days ago.
Dishwasher had chlorine residual of 50 ppm at plate surface.
Staff were wearing hair restraint (hats). Observed staff washing hands prior to preparing food.
Bar area:
Hand sink adequately maintained.
Glass ware washer had 50 ppm chlorine residual.
Coolers were at 4 deg C.
All condiments were covered.
Washrooms were in sanitary condition.
General sanitation was ok. Effort noted in keeping premises in sanitary condition. Kitchen was cleaner than previous inspection.
