402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): Employee observed handling cash and coins with gloves. The same gloves were used to place food products into bags in the kitchen.
Corrective Action(s): Employee washed hands at time of inspection. You must wash your hands after handling cash and coins if you will be handling food products in the kitchen. General manager was aware of the situation and will be relaying this to all staff members.

Follow-up inspection to routine conducted on December 10, 2018 (RPT#: JMAA-B7BS8C). Provided further elaboration and feedback with Market Lead and General Manager on previous inspection.

The following observations were made:
- Prep cooler is now at 2C. You are now permitted to use the prep cooler for storage of potentially hazardous foods
- Ice machine has been cleaned; however, there are still traces of mildew, especially around the screws securing the metal plate inside the machine. Ice machine has been emptied and re-sanitized during inspection
- Basement of establishment is in improved sanitary condition - walk-in cooler and walk-in freezer areas have been swept. Some grime remains in the corner of the walk-in cooler downstairs. General manager stated that this will be addressed with all staff members; grime to be cleared out this week
- Dishwasher dispenser and sanitizer dispenser (quats) logs have been created and will be checked in future inspections
- Janitorial area on first floor of facility has been cleaned, rodent droppings were removed

Reminders:
- When monitoring temperatures, do not simply check the internal temperature of newly placed items inside the coolers / hot-holders as they will not be an accurate representation of its ambient temperature. Rely on other indicators such as the internal temperature of items that have been inside the cooler for a longer period of time, or thermometer units. This way, you can determine when the cooler is malfunctioning
- Ensure that each staff member is trained on your corporate food safety plan and sanitation plan
