Observation (CORRECTED DURING INSPECTION): Front service area sanitizer buckets are not filled and not in use with QUAT sanitizer to sanitize food contact surfaces during food service. Sanitizer was in use in back kitchen in spray bottle.
Corrective Action(s): Ensure all work station have 200 to 400 ppm QUAT sanitizer available to sanitizer food contact surfaces during service. Operator filled buckets with 400 ppm QUATS at the time of inspection.
