Hand washing stations have liquid soap and paper towels.
Hot holding - soup stock is to be held above 60 C (re-boil every 2 hours).
Cooling procedures reviewed - cool using cold water with ice and stir. Transfer to smaller containers and store in cooler.
Dishwasher has a chlorine sanitizing rinse of 50ppm.
Premises is well-organized.
