2. Large container of red sauce observed to be stored beside cooking line. Product measured 15.5°C. Staff stated this was placed there during lunch rush.

Observation (CORRECTED DURING INSPECTION): Multiple products in cooler units observed to be stored uncovered.
**Corrected during inspection** Operator instructed staff to cover products. Some products could be cooling, and could not be covered. Staff must remember to cover all products after cooling.

Observation (CORRECTED DURING INSPECTION): Fillets of fish observed to be stored at room temperature, on chest freezer nearest walk-in cooler. Product was submerged in water, and measured 10.0°C.
**Corrected during inspection** Operator stated product was meant to be processed, but staff became busy. Product returned to cooler. Staff educated on importance of returning products to cooler when not in use.

Low temperature dishwasher not on at start of inspection; measured 200ppm
Remember to have dishwasher on whenever kitchen is in operation
Ice machine observed to be clean
Overall sanitation of facility satisfactory at time of inspection

Storage:
All food items were stored at least 6" off the floor.
Storage area was well-organized.
Chemicals and cleaners were stored separate from food preparation areas.

General:
No signs of pest activity at time of inspection
Owner and chef has FOODSAFE Level 1 (exp July 31, 2023, July 23, 2023)
