-Coolers measured 4C or less: walk in cooler, 2 prep cooler, undercounter cooler
-Freezers measured -15C: chest freezer and walk in freezer
-Temperature logs available and maintained
-Dishwasher measures 50ppm chlorine sanitizer
-Spray bottles are 200ppm quats
-Food safe certificates provided. Reminder that at least 1 person per shift must have a valid food safe level 1 certificate
-Raw shell eggs are kept on a 2 hour cycle
-Hot holding unit above 60C
-Ice machine is clean and scoop is kept in a clean container
-Meat slicer is clean and stored in a sanitary manner
-Foods are covered and kept 6 inches off the ground. Labels noted
-No signs of pest during inspection
