Observation: 1) Knife bin found with some debris in bottom
2) Rag hung beside prep area for hand wiping
3) Found double stacked food inserts - meat/ sausage
4) Veggie chopper (not in use) found in storage with some dried on food debris
Corrective Action(s): 1) Clean and sanitize containers that hold food utensils regularly
2) Never hang rags for wiping hands. Use single use disposable paper towels, and keep wiping rags in a sanitizer solution
3) As noted in multiple inspections, you must not double stack your inserts!! Food will not stay at 4C or below when like this. EHO transferred product to 2 smaller inserts which fit well in the prep cooler. Use this method
4) Clean and sanitize your food equipment before putting away for storage.

Sanitizer was made by request of EHO - found at 100ppm

Other than above noted, food equipment generally in good sanitation, including meat slicer. Please ensure the body of the machine also gets wiped down
