Observation (CORRECTED DURING INSPECTION): Observed one staff eating in kitchen during food preparation.
Corrective Action(s): Do not eat in kitchen and/or during food service. Eat in designated dining areas during breaks and wash hands before commencing work again.

Comments

The following was observed at the time of inspection:

Main Kitchen:
-200 ppm Quat Sanitizer in use
-Hand stations with liquid soap, warm water and paper towels in use.
-Dishwasher final rinse at 78 deg. C at the plate as per min/max thermometer
-Handsinks and prep sinks in use and operational. Microwaves are sanitary
-Food is protected from contamination
-Premise is sanitary
-No signs of pest or pest activity
-Dry storage area is sanitary
-Temp logs and monitoring in place
-ice machine is sanitary with scoop stored in a safe location
-Walk in freezer -18.1 deg. C bananas
-Walk in cooler 3.2 deg. C Califlower soup
-Back stand up cooler Bacon at 3.2 deg. C
-Prep cooler 3.8 deg. C Whip cream
-soup and 4 compartment hot holding unit not in use at time of inspection.
-ice cream chest cooler -18 deg. C ice cream
-Dairy Fridge cooler 1.6 deg. C Milk and cream
-Juice & drinks dispensers are sanitary
-Single use items and taste testing spoons only used once then discarded
-Ultensils and dining area well kept

Renovated Bistro island/Area
-Ice machine is satisfactory - a dedicated scoop in a container is required
-Storage space is adequate and sanitary
-Counter fridge at 1.2 deg. C
-Display fridge at 0.5 deg. C
-Temperature monitoring in place
-Microwave is operational and sanitary
-Hand sink with liquid soap, paper towels and warm running water available
-Materials are built out of non-absorbent durable, easy to clean and food grade construction
-Station is built as per approved plans

-Approval for Bistro island / area for operation in the premise given.

Note: Education was given on hand washing. Ensure to always wash hands after touching dirty dishes and switching to processing CLEAN DISHES or food.

Soaking hands in bleach or sanitizer is not adequate good personal hygiene and CANNOT replace hand washing.
