Observation: - Garbage in back dishwashing area was overflowing. [Corrected during inspection]
- Debris noted on floor under warewashing sink and ice machine. Numerous items (non food items) stored on floor which do not facilitate cleaning.
- Accumulation of food debris (coffee beans and grounds) noted under cabinets in front service area.

Corrective Action(s): - Thoroughly clean above noted areas to remove all debris. Remove moveable items from floor in the back. Keep floor area clear to facilitate cleaning. [Correction date: 2-May-2019]

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: - Door on right undercounter barista cooler (under right espresso machine) is not closing securely. Seal/gasket on door appears worn. Note: Temperature of cooler was satisfactory at time of inspection.
Corrective Action(s): - Replace door seal so that door closes properly. [Correction date: 2-May-2019]

Comments

- Handsink in front service area supplied with hot and cold water, liquid soap and paper towel.
- New soap dispenser was being installed at back handsink at time of the inspection. Paper towel present.
- All coolers were operating at 4C or colder
- Single door freezers were -18C; -20C
- Quats sanitizer from dispenser at 2 compartment sink and in containers/buckets with wiping cloths measured 200ppm
- Plugs present for 2 compartment warewashing sink for items which require manual warewashing.
- High temperature dishwasher operational. Final rinse measured 79.8C at dish surface which is effective to sanitize dishes.
- Ice machine appears to be maintained in sanitary condition. Manager reported it is emptied, cleaned and sanitized weekly. Procedures posted on ice machine.
- Pest control contract in place with monthly service. Most recent report viewed at time of the inspection.
