Observation: A build up of mildew/biofilm was observed on interior compartment of ice machine where ice is made.
Corrective Action(s): Ensure that all interior surfaces of ice machine are properly cleaned and sanitized to limit potential contamination of ice. Date to be corrected by: July 4, 2018.

Observation (CORRECTED DURING INSPECTION): No paper towels were available at the back hand washing station.
Corrective Action(s): Paper towel dispenser was refilled at time of inspection. Ensure that at all times, all hand washing stations are accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels to facilitate proper hand washing.

Observation: Food debris and/or grease observed in the following areas:
- Ventilation hood canopies
- On floor and equipment under flat top grill
- On floor under shelving and equipment in the back area
Corrective Action(s): Ensure that the above-noted areas, along with any other hard-to-reach areas, are properly cleaned and sanitized. Food debris and/or grease may potentially attract pest activity and may potentially contaminate food and/or food contact surfaces. Date to be corrected by: July 17, 2018.

- Coolers at 4 degrees C or less
- Freezer at -14 degrees C
- Hot holding internal temperatures at 60 degrees C or more
- Secondary cook step in place for gyros--discussed
- Bleach water sanitizer available in a labeled spray bottle at 100 to 200 ppm chlorine. Bleach water sanitizer was prepared in third compartment warewashing sink at 100 ppm chlorine at time of inspection. Chlorine test strips available.
- Hand washing sinks supplied with hot and cold running water, liquid hand soap, and single use paper towels (refer to code #401 for violation--corrected at time of inspection)
- Utensils stored in clean condition
- No signs of pest activity observed
- FOODSAFE requirements met at time of inspection
- Washrooms maintained in clean condition and sinks are adequately supplied
- Temperature and sanitation records available. Note: Ensure up-to-date records are maintained on site.
