Observation (CORRECTED DURING INSPECTION): No sanitizer solution was available for use in the kitchen or front server area.
Corrective Action(s): Operator prepared fresh bleach solution for both areas at time of inspection; 100 ppm chlorine detected. Sanitizer solution must be available during all hours of operation, and changed at least every 4 hours or sooner if solution becomes visibly dirty.

Observation (CORRECTED DURING INSPECTION): - A bowl of raw meat mixture (spring roll filling) was stored above cooked, ready-to-eat food in the upright sliding glass door cooler.
- Drinking glasses were being stored in the ice bin of ice machine
Corrective Action(s): - Ensure all raw food is stored below ready-to-eat food to prevent possible contamination.
- Do not store any items in the ice machine, as ice can be contaminated this way.

Observation: Floors in the following hard to reach areas/corners need to be cleaned:
- Dry storage area
- Back area by staff washroom
- Between the walk-in freezer and upright sliding glass door cooler
Corrective Action(s): Ensure floors in these areas are cleaned on a regular basis.

Comments

- Hand sinks were supplied with hot and cold running water, liquid soap, and paper towels
- Dishwasher registered greater than 50 ppm chlorine at the plate surface after rinse cycle
- All coolers were at or below 4C
- All freezers were at or below -18C
- Hot held items were above 60C
- Broth was cooling in sink with cold, running water - good
- Bean sprouts held in bucket were placed in sink under cold, running water. *Ensure to place in cooler during slow periods.
** Reminder that potentially hazardous foods (including rice) must not be held at room temperature for more than 2 hours
