Routine Inspection
- Handwashing stations are equipped with liquid soap and paper towels. Hot and cold running water is available.
- Quat sanitizer is available at 200 ppm concentration.
- Dishwasher reached 50 ppm concentration for rinse cycle.
- Glass washer reached 12.5 ppm concentration for iodine sanitizer.
- All coolers at 4 c or below and equipped with thermometers. Note: Some pooling water found in the true cooler beneath the chilli hot holding. Ensure the drain is functioning adequately
- Freezers at -18 c. Note: Ice accumulation observed on the walk in freezer door. Remove the ice and ensure door seals adequately.
Note: Do not store knives in between cooler and prep table.
