Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous food stored inside the sandwich cooler (#3) measured with an internal temperature of 10C. The ambient air temperature inside the cooler measured at 11C. Temperature record indicated this cooler was at 6C in the morning.
Corrective Action(s): Half insert of chicken, beef and patties were discarded at the time of inspection. Staff unplugged then plug the cooler power line. Ambient air temperature measured at 4C after this. Monitor the cooler (#3) temperature and service if needed.

Observation (CORRECTED DURING INSPECTION): Quaternary ammonium sanitizer in spray bottle and from the 3 compartment sink measured at less than 50 ppm in concentration. 200 ppm is required to properly sanitize food contact surfaces.
Corrective Action(s): Discard and refill with fresh 200 ppm quats sanitizer from the dispenser. Clean and sanitize all food contact surfaces on site.

Observation (CORRECTED DURING INSPECTION): Staff not observed to be washing hand at an adequate frequency. No staff washed their hands during inspection.
Corrective Action(s): Operator to educate / remind staff on importance of hand washing. Staff must wash their hands when changing tasks and when hands are visibly dirty.

- 200 Quats sanitizer available from the dispenser.
- Food processor maintained in sanitary condition.
- Temperature records Sporadically maintained.
