Routine inspection conducted at the food facility and the following observations were made during the inspection:

Temperature (coolers to be at 4C or less, freezers at -18C or less):
- Prep coolers (x2) maintained at 4C.
- Milk cold held at 0C.
- Freezers noted at -18C or less.
- Hot holding of cooked onions & mushrooms was noted at 71C, gravy at 73C.
- Time tracking is conducted for foods held at room temperature.
- Temperature logs were maintained and found up-to-date.

Storage:
- All food items were stored at least 6" off the floor.
- All products were found either in original packaging or covered inside coolers.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash stations were adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer pails available and the concentration of QUATS noted at 200ppm.
- 3 compartment dishwashing sink present. 200 ppm QUATS was measured at 3rd sink.
- Utensils and tongs were found in sanitary condition.
- 3 compartment prep sink is used for washing raw potatoes (fries) to remove extra starch prior to frying them.
- Prep sink was maintained in sanitary condition.
- Customer self serve area was clean.
- Washrooms maintained in good sanitary condition with supply of hot/cold running water, liquid soap and single-use paper towels.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
- Staff on duty has valid FoodSafe Level 1 certificate.
