Observation: Observed minor build up of food debris in following areas:
- Back area walk-in cooler in hard to reach areas and along wall;
- below and around mop sink (accessibility issues from freezer #3 compound water sitting for long periods of time);
- In the corner by the beverage syrups station;
- below freezer #4;
- below cookline in hard-to-reach spots (at legs of equipment).
May be food sources for variety of pests, or promote a 'creep' of unsanitary conditions.
Corrective Action(s): Focus on noted areas for more intensive cleaning during schedluled cleaning interval. Clean more often.

Comments

Surrounding area to mop sink was very wet. The mop sink surround easily allows water to infiltrate. Freezer #3 is located very close to mop sink, making clean up of this area more awkward. Moisture spreading and ponding. Long-term plan needed to address water intrusion into walls surrounding mop sink. Recommend relocating the freezer. Monitor for further deterioration to this area.

Observed gases/odour from grease trap compartment area. Ensure off gasing is not sewer gas related as this may impact health and safety of employees. Ensure grease trap is maintained in adequate manner and designed not to promote sewer gases from escaping into employee working areas.

Cupboard door below beverage station in lobby hanging by one hindge. Fix as this could be safety hazard for customers.

Cooling units less than 4 C.
Hot holding above 60 C.
Quats in sanibuckets all at 200 ppm
Sink quats solution noted between 200 and 400 ppm.
Freezers below -18 C.
