All coolers were < 4 C. All freezers were < -18 C. Congee was hot held at > 60 C. Discussed cooling practices for foods made in advance. The dishwasher reached 72 C at the plate level. Hand sinks supplied with hot and cold water, soap and paper towels. Bleach sanitizer was at 100 ppm. No evidence of pests. Pest control report available for review. General sanitation was satisfactory.
