Observation: A bucket of water set up near the tandoori area was being used for washing dirty hands.
Corrective Action(s): Wash dirty hands under running water at the sink with soap and dry with paper towel. Bucket of water is disposed of.

Observation: The lock on the lid of one of the chest freezer is removed leaving a cavity that collects dirt.

Comments

The old ice machine has been removed.
Provide a hand sink next to the tandoori oven area.
Ensure staff are washing hand.
Obtain cooling wands. Cool foods in shallow containers with cooling wand inside while stored on racks.
Make sure container used for storing foods are food grade.
Provide a shelve for storage of onions so the floor can be cleaned underneath.
Close the gap around the bottom of the new screen door to keep pest out.
Make the floor under the dirty dish table smooth.
Check temperature and record on paper daily.
A new dishwasher has been installed and temperature is satisfactory.
No obvious signs of pest noted.
