Observation (CORRECTED DURING INSPECTION): No surface sanitizer was readily available for use at time of inspection.
Corrective Action(s): Mix 1 oz bleach with 1 gallon of water for proper concentrations. Sanitizer must always be avilable for use during all hours of operation.

Observation (CORRECTED DURING INSPECTION): Hand sink in front had no soap. Hand sink in production area had no soap or paper towels.
Corrective Action(s): Ensure all hand washing stations are always supplied with liquid soap and paper towels. Corrected at time of inspection.

Observation: Bags of opened dry ingredients stored on floor. Some lids for dry ingredient bins were not tightly closed.

Observation: Small amounts of mouse droppings observed in corners and around permiters upstairs and in back room by electrical panel.
Corrective Action(s): Remove droppings. Sanitize all affected areas with bleach solution.

Observation: - Gap under bay door has still not been sealed.
- Bay door was left open at time of inspection
- Grease and food debris accumulation under and behind cooking equipment and throughout facility floors
Corrective Action(s): - Seal gap under bay door - install a door sweep.
- Do not leave doors open
- Keep floors and equipment clean to prevent attraction of pests.

Observation: Floors in entire facility (including walk-in cooler) had significant amount of food debris accumulation. Walls and ceiling around exhaust canopy had grease build-up. Ventilation canopy and cooking equipment (fryers) require cleaning and sanitizing. Equipment (bins, lids, baking trays and racks, etc.) also require deep cleaning.
Corrective Action(s): Deep cleaning needed of entire facility. CORRECTION ORDER ISSUED.
