Cooling units less than 4 C. Hot holding above 60 C. General sanitation good. Make sure to keep the quats spray bottles handy for regular wipe down and disinfection of counter tops where food is prepped. Slushy stations too. Back area storage and beverage syrups better. Keep it up.
