Comments

A routine inspection was conducted, the following observations were made:
- Renovations were completed and built as per approved plan. A second walk-in-cooler was installed in the dry storage area; a new pastry oven was installed; a new low temperature dishwasher was installed (in conjunction with the 3-comp. sink); and additional equipment installed in the assembly area.
- All coolers were 4C/40F or colder; freezer temperatures were -16C or colder; hot holding units were above 60C/140F; thermometers present, and temperatures recorded routinely.
- Low temperature dishwasher [Cl2] was 50ppm; and [Cl2] for clean cloth towels was 100ppm.
- Quats sanitizer in spray bottles and 3-comp. sink was 200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Sanitation level is good.
- Some flies observed in the premises. Ensure all drive-thru windows are kept closed at all times and only opened when needed. If problem escalate, it is recommended to install a fan above the windows which blows air away to stop flies from entering. Consult with your pest control company.
- FoodSafe certified staff present.
- Food storage practices done properly. All foods stored 6" off the floor; in groups with proteins away from RTE foods; in food grade containers; covered; labeled; and date coded.
- Food handling practices done properly.
- No expired foods found in use or for sale. FIFO rules being followed and easier to do with the second walk-in-cooler.
- All in order.
