- Routine inspection conducted.
- All hand washing stations were properly supplied with hot and cold running water, liquid soap, and paper towels.
- Quats sanitizer solution available at 200 ppm in sanitizing pails and from dispenser.
- Triple-sink for manual warewashing maintained in sanitary conditions.
- High-temperature dishwasher reached 75C at the dish surface during final rinse cycle. Good - minimum of 71C at the dish surface is required.
- All coolers maintaining temperatures at 4C or colder.
- Freezer temperatures satisfactory.
- Hot-holding of food items maintained at 60C or hotter.
- Toppings and condiments held at ambient room temperature were properly time-tracked.
- Temperature logs maintained. Accurate thermometers available.
- Good food storage practices noted. All food stored off the floor, properly covered, with good separation between raw and ready-to-eat food items.
- Dry storage area satisfactory.
