Observation: - Raisins in storage bin were uncovered.
- Bags of ingredients (potatoes, flour, cocoa powder, etc.) stored directly on floor.
Corrective Action(s): - As previously discussed, ensure ALL food is stored properly covered with tight-fitting lids.
- Do not store any food or food-related items directly on the floor.

Observation: Small number of mouse droppings observed in flour storage area.
Corrective Action(s): Clean and sanitize floors with bleach solution. Ensure to keep all food stored off the floor.
Ensure pest control company is continuing with monthly visits. Have the previous three pest control reports onsite for inspector to review next week.

Observation: - All dry ingredient bins in facility require thorough cleaning and sanitizing.
- Walk-in cooler floors require cleaning.

- Floors in hard to reach corners require cleaning.
Corrective Action(s): Ensure all areas noted above are thoroughly cleaned and sanitized. Scrape all areas that have dried-on flour/dough residue.

- Bleach sanitizer solution available at 100 ppm (chlorine)
- Walk-in cooler measured to be at 3C
- Upright freezer temperature satisfactory.
- Weather stripping for bay door OK - ensure it is always in good repair such that no gaps are present under door.

**Follow-up inspection scheduled for Monday, February 25th.
- Ensure all cleaning and sanitizing has been completed.
