Observation: Air temp of under counter cooler at cooking area is elevated, it has been open and close
Corrective Action(s): -Monitor the temp in 1 hr ( keep the door close) if temp is still elevated > 4 oC transfer products to other working coolers and repair to maintain temp < 4oC .

Comments

General
- Hand sinks are stocked with hot + cold running water, soap and paper towel.
- Bleach sanitizer @ >100 ppm. .
- High temp dishwasher >71 oC at plate
- All coolers <4 degrees Celsius, freezer temp satisfactory, with the exception of noted cooler.
-Thermometers are provided at coolers
-General sanitation is very good at time of visit.
- No signs of pest activity during inspection.

* Noted a lot of large pot of liquid ( stew) foods, operator explained cooling procedure - using ice water bath properly. In the past operator used cooling wand but due to condensation water getting to food stop using them.

No signature is obtained at time of visit due to covid- Verbally explained and a copy is provided to the operator.
