Observation (CORRECTED DURING INSPECTION): REPEAT OBSERVATION: sanitizer solution not available at the time of inspection.
Staff made new batch however didn't test the solution for concentration. Concentration was found to be 0 ppm QUATS.
Corrective Action(s): Replaced concentrate solution at dispensing station and refilled sanitizer bucket. Sanitizer measured 200 ppm QUATS.
Ensure that sanitizer is always prepared before starting work. Concentration must be checked using test strips to ensure 200 ppm QUATS.

=Walk-in cooler (2C) and sandwich cooler (4C) measured < 4 degrees C
=walk-in freezer measured -19 degrees C
=Soup hot holding (97C) and meatball hot holding (94C) measured > 60 degrees C
=3 compartment sink with sink plugs available for manual dishwashing. Operator able to demonstrate manual warewashing method
=General sanitation was satisfactory at the time of inspection
=General food storage practices good at the time of inspection. Foods properly stored off the floor and covered.

Some fruit fly activity noted in the mop sink area. Pest control has recommended cleaning and sanitizing floor drain in the area.
Follow all recommendations of the pest control service and ensure that the pests are eliminated.
