Observation: Internal temperature of gravy and au jus registered between 57-58 C.
Corrective Action(s): You must reheat these items (boil again) and hold these items at 60 C or hotter at all times ( immediately).

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Final rinse temperature for dishwasher ranged from 67 to 68.8 C at the plate surface.
Corrective Action(s): Repair or adjust the dishwasher so that it reaches at least 71 C at the plate surface or 82 C at the guage ( immediately)

208 - Foods obtained from unapproved sources [s. 11]
Observation: 3-4 egg trays were noticed with some filthy and non graded eggs. The egg trays were removed by the chefs
Corrective Action(s): You must purchase only graded eggs from approved commercial sources ( immediately).

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1. Loafs of packaged bread were found stored in garbage bags. This is a repeat violation.
2. Several buckets and containers of food items were found uncoverd in the walk-in cooler
3. Push pins were found on the walls near food prepartion areas and counters
Corrective Action(s): 1. NEVER STORE ANY FOOD ITEMS, EQUIPMENT OR UTENSILS IN GARBAGE BAGS AS THERE IS RISK OF CONTAMINATION FROM ODOUR SUPRESSING CHEMICALS. ( CORRECTED DURING INSPECTION).
2. Ensure that all buckets and containers of food items are kept coverd at all times to prevent contamination.
3. Push pins and thumb tacks could pose a risk of foreign object (physical) contamination in customer's foods. All thumb tacks were remove by the chefs at the time of inspection

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Build up of dirt, dust and food debris noticed throughout the restaurant especially in the following areas:
1. Underneath the warmer tables along the wall
2. Ceilings, hoses, light fixtures and floor in the walk-in cooler
3. Drawers underneath the food prep counters near the walk-in cooler
4. Floors underneath and behind equipment and shelving in dry storage areas
5. Around the sides of the ice maker.
6. Entire floor in the bottle recyclign room.
Corrective Action(s): Thorough cleaing required in all of the above areas ( by March 6, 2020).

Comments

A correction order was issued due to repeat violations.

* Do not store dirty brooms and dust pans above the reusable buckets. All buckets were re-washed at the time of inspection.
* A deteriorated plastic container (salad mixer) was discarded at the time of inspection.
* Clean the interior of beer keg storage cooler.
* Clean the fan unit, refrigerant hoses, ceiling and upper section of walls in the walk-in cooler ( By March 6, 2020).
* Repair or replace the toilet in the staff washroom.
* Do not store mops and mop buckets and brooms etc, near food preparation or dishwashing areas.
