Observation (CORRECTED DURING INSPECTION): Bar station handsink had not hand soap available. Liquid soap pump was missing.
Corrective Action: All handsinks must have adequate liquid soap, single-use paper towels and hot/cold running water. so staff can properly wash their hands. Have temporary liquid soap pump placed at station until permanent pump can be replaced.

Observation: Drain flies visible in dishwashing area, dry storage and upstairs storage area.
Corrective Action: Ensure monitoring of pests and regular cleaning is occuring. Prevent any standing water. Manager stated Pest Control is visiting regularly. Have move traps placed to prevent for other infestation.

Observation: Cook line area near fryers had visible grease and debris build-up underneath and in hard to reach areas.
Corrective Action: Hard to reach areas must be washed and sanitized regularly to ensure sanitary conditions are maintained and to not provide food for potential pests.

Observation: Prep line cooler drawers had broken handles on two drawers.
Corrective Action: Equipment must be repaired as soon as possible to prevent debris build-up in this area and to have equipment in good working order. This area must be regularly washed and sanitized to prevent contamination of food products.

Kitchen / Staff washroom handsinks had hot/cold running water, liquid soap and single use paper towels.
All fridges (prep coolers and walkin) measured at 4C or below.
Prep freezer and walk-in freezer measured at -18C
Hot-holding measured at above 60C
Quat Sanitizer in bottles and buckets and at dispenser measured at 200ppm
Low temperature dishwasher measured between 100-200ppm chlorine sanitizer
All food items in coolers and dry storage were organized and stored off the ground.
Ice machine was clean and ice scoops stored in sanitary containers
Hood vents maintained and regularly cleaned.
Iodine glasswasher measured at 12.5ppm
Permit posted and Foodsafe Training is valid.
Thermometers available in coolers.

Recommendations:

Place weather stripping on back to prevent entrance of pests.

Ensure staff are regularly changing aprons and maintaining sanitary / clean clothing.
