Observation (CORRECTED DURING INSPECTION): Unwrapped chunk of frozen meat found on the floor underneath a shelf in the walk-in freezer.
Corrective Action(s): Meat was discarded.
Ensure all foods are stored six inches above the floor and in food grade containers or wrapping to protect from contamination.

Routine Inspection
-All coolers (with the exception of the four drawer hood cooler) registered at 4 C or below.
-Four drawer hood cooler registered at 6.2 C - all foods were 4 C or below. Monitor cooler and ensure it is able to maintain a temperature of 4 C or below. Adjust settings if needed.
Note: Inspection was carried out during lunch preparation and serving.
-All freezers were -18 C or below.
-Hot held food and hot holding units were above 60 C.
-Foods that were being plated (for lunch) were held on ice.
-Hand washing sinks equipped with hot and cold running water, liquid soap and single use towels. **Ensure water is not too hot to prevent scalding and to allow for proper hand washing.
-High temperature dishwasher registered at 74 C on plate surface during final rinse.
***Nature's Own Disinfectant (DIN 02358859) at a concentration of 400 ppm for Quats used as a sanitizer. Product is approved to use by Health Canada and approved for use in food premises however, label does not indicate at which concentration it can be used as a sanitizer without requiring a potable water rinse. Follow up with supplier/manufacturer for clear instructions on how to use in kitchen and on food contact surfaces. Solution was diluted to 200 ppm in the interim.
-Pest control services in place. Discussed fly drains and increasing sanitation around drains.
-General sanitation satisfactory.
