Observation: - Bleach sanitizer solution was too strong and bleached out the test strip.
- Ice machine condenser panel had accumulation of mildew/mould.
Corrective Action(s): - Mix only 1 tsp of bleach into the spray bottle.
- Empty ice bin, then clean and sanitize all parts of the ice machine (inside). This must be done every month to prevent ice from being contaminated.

- Hand sinks were supplied with hot and cold running water, liquid soap, and paper towels
- Low-temperature dishwasher dispensed 50 ppm chlorine to dishes, detected after rinse cycle
- Test strips available for monitoring dishwasher concentration. Ensure to use daily.
- All coolers were at 4C or colder. **During slower times, ensure lids of prep cooler inserts are used.
- All freezers were at -18C or colder
- Hot held items were above 60C
- General sanitation satisactory
- Food storage practices satisfactory
- No signs pest activity noted

**Note: Do not store dirty mop water in mop bucket overnight. Do not discard mop water into storm drains - dispose of mop water into the sanitary sewer (ie, flush mop water down a toilet or use mop sink).
