Observation (CORRECTED DURING INSPECTION): Quaternary ammonium compounds (quats) sanitizer in bucket for food prep area was measured at 50 ppm. Several wiping cloths were observed to be stored on the counters.
Corrective Action(s): Sanitizer was changed and tested at 200 ppm quats. Please ensure that wiping cloths are stored within sanitizer and solution is changed as needed to maintain a concentration of 200 ppm quats for effective sanitizing. Quats test strips are available.

Routine inspection conducted:

- Coolers at 4 degrees C or less
- A probe thermometer is available for internal temperature checks. 70% isopropyl alcohol wipes are available for sanitizing the probe thermometer.
- Food is stored safely and protected from contamination.
- Hand washing sink is unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels
- Quaternary ammonium compounds (quats) sanitizer is available at 200 ppm from the dispenser at the ware washing sinks. Sink plugs are available.
- In-use utensils are stored in ice water
- Discussed cleaning and sanitizing of equipment
- No evidence of pest activity observed at time of inspection. Premises is serviced by a pest control company on a monthly basis. Reports reviewed at time of inspection.
- General sanitation good
- Washroom sink is adequately supplied

Notes:
1. Sanitizer concentrate is running low in the bag at the dispenser. Monitor and change as necessary.
2. Temperature records on site indicate the prep cooler inserts are being monitored and recorded. Other cold holding units are monitored electronically with sensors.
