A routine inspection was completed, the following observations were made:
- Coolers 4C or colder; freezers -18C or colder; hot holding 50C (but pizza held <2 hours then discarded; and thermometers present.
- Quats sanitizer had strength of 200ppm.
- Lysol, general purpose cleaner used to sanitize high tough surfaces.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- General sanitation level is good. Improvement needed in the mentioned areas.
- No signs of pests.
- All foods stored in food grade containers; covered; date coded; foods stored in groups with proteins below RTE foods; and foods stored 6" off the floor on shelves and racks.
- FoodSafe certified staff present (owner and 2 managers).
- No expired foods in use. FIFO rules being followed.
- Plastic corrugated squares are being used to cover pizza dough in plans. This material is not acceptable as the corrugated spaces accumulate food in them, this will attract pests. As well, the plastic is not food grade, chemicals in the plastic could leach into food it touches and cause people to become ill. The manager explained that they wash and sanitize these squares after each use. This material will be allowed to be used on condition that the premises remains pest free; the material does NOT touch food; and the material is washed and sanitized after EACH use.
- Discussed results of the inspection with the manager, no signature obtained due to the pandemic. |
