Observation:
Found openings in walls (by baseboard heater in washroom area, and by ice machine) that are possible entry points for mice.
Corrective Action(s):
Do a thorough inspection of all walls and areas around water and electrical pipes exiting walls for holes or openings that are 1/4" of larger. Block and/or tightly stuff holes and openings with steel wool; install metal plates or wire mesh (1/4" of smaller) to exclude mice.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
Accumulation of food debris and grease on legs of equipment, prep tables, sinks, and shelving racks; on walls behind equipment, prep tables, sinks, and shelving racks; on the undersides on sinks; and on the floors along the base of walls. This will attract and harbor mice and flies.
Corrective Action(s):
A deep, thorough clean of the mentioned areas requires to be done. Move equipment, prep tables, and other items off floors and away from walls to clean the mentioned areas. Use a scrub brush, hot water, soap and/or degreaser to remove food and grease debris. A thorough clean should be done on quarterly or more frequently.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -8C or colder; hot holding 60C; and thermometers present.
- High temperature dishwasher had a rinse cycle temperature of 77.9C at the plate's surface as per max/min thermometer.
- Handwashing sink is stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottle had 50ppm strength. Sanitizer was being diluted, but no instructions on original Quats bottle to dilute chemical. Strength of Quats sanitizer in original bottle was barely 200ppm. Do NOT dilute Quats chemical, use full strength.
- All foods stored in food grade containers; covered; date coded; labelled; foods stored in groups with proteins separate or below RTE foods; and all foods stored off the ground.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is satisfactory. Improvement needed in the mentioned areas.
- Exhaust canopy and filters are clean.
- Mice activity noted, but premises has mechanical traps and is serviced by a professional pest company every 2 weeks. Premises is completing what is needed to eliminate the pest.
- Valid FoodSafe certified staff present.
- Stainless steel frame installed around the pass-thru window by the dishwasher. Hole in wall behind the pasta making machine have been repaired. The wall is smooth, durable and cleanable.
- Violations from previous inspection have been corrected.

ACTION
Use Quats sanitizer at full strength. Contact supplier to confirm if dilution is needed, if so, what is the diluting ratio.
Purchase Quats test strips to ensure sanitizing strength is 200ppm.
Schedule the exhaust canopy to be professionally cleaned, as it was due to be done in August 2023 as per the service sticker.
Bleach sanitizer can also be used. 1 Tbsp of bleach to 4L of water, or 1Tsp of bleach to 1L of water.
