304 - Premises not free of pests [s. 26(a)]
Observation: Observed mice droppings in the dry storage area, around the chest freezers, and on lower shelves in the dishwashing area. Mice droppings contain pathogens that could make patrons ill if they ate food that came into contact with it.
Corrective Action(s): The following require to be completed:
- Clean up the mice droppings. Wash and sanitize all surfaces that came into contact with the droppings.
- Nightly detailed cleaning of hard to reach areas shall be done prior to going home.
- Hire a professional pest company to complete an inspection to determine entry points, and to put a plan in place to eliminate the mice. Block all entry points with metal plates; wire mesh (1/4" of smaller); and/or tightly packed steel wool.
- Pest technician shall ue non-chemical means to eliminate the mice.
- Follow all recommendations made by the pest technicians.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation (CORRECTED DURING INSPECTION): The back door was propped open, this will allow pests (mice and flies) into the premises.
Corrective Action(s): The back door must be kept closed at all times to prevent pest entry. Install a screen door on the back door, if the owner would like to keep the back door open. During the inspection, the owner closed the back door.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: There is some food debris and foods stains on the exterior surfaces of food containers and lids; on exterior surfaces of equipment (chest freezers, upright coolers, assembly coolers); and on walls behind chest freezers. The food debris and food stains are a food source to mice.
Corrective Action(s): Detailed cleaning and hard to reach areas require to be cleaned EVERY night. This will help eliminate the pest problem. Use hot water, soap and a scrub brush to remove all the food stains and accumulated grease.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -18C or colder; hot holding units above 60C; and thermometers present.
- Raw bean sprouts, cut jalapenos, cut limes, and basil leaves stored in containers on ice, on the counter top.
- Low temp dishwasher had [Cl2] between 50-100ppm during the rinse cycle.
- Buckets storing wiping cloths and sanitizing spray bottles have [Cl2] of 200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; foods stored in groups with raw proteins separate or below RTE foods; and foods stored 6" off the floor on racks and shelves.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is satisfactory, but improvement needed in the mentioned areas to eliminate mice problem.
- Exhaust canopy was last serviced in November 2022. Accessible areas of the exhaust canopy is cleaned regularly to remove grease accumulation.
- Mice droppings found.
- Ice machine is in working order. The scoop is stored properly and the interior surfaces of the ice machine is clean and absent of mould.
- Valid FoodSafe certified staff present.
- Valid health permit decal present.
- The hand sink in the waitress area no longer drips/leaks.

ACTION: Email a copy of every pest report, to our office for review.
