Observation (CORRECTED DURING INSPECTION): Sanitizer solution in bucket and spray bottles tested to be @ <100ppm quats. When filling the sanitizer solution at dispenser, the water was hot. Manager advised Ecolab is coming in
Corrective Action(s): Sanitizer solution has to have min.200ppm concentration for quats, and be in lukewarm water. Have Ecolab come in to adjust, and ensure the sanitizer is achieving min 200ppm. Use chlorine solution until repaired (have chlorine concentration at 100-200 ppm/½ tsp chlorine and 50ml water

Observation (CORRECTED DURING INSPECTION): Sausages and meat/proteins (packaged food) being stored on the floor in walk in cooler, 2 packages of opened fries found being stored on the floor in walk in freezer. Packages of sugar found being stored on the floor under prep table in the back kitchen
Corrective Action(s): All food items need to be stored at least 15cm off the floor. Store proteins in the cooler on shelves and fries in the freezer on shelves. Store sugar on the prep table shelf

304 - Premises not free of pests [s. 26(a)]
Observation: Few ants found around the corner of the deep fryer against the wall towards the mop sink area. Staff indicated they are only being seen around that area and not anywhere else. No other pests evidence found during time of inspection. Manager will contact pest control company today.(Ecolab)

Corrective Action(s): Thoroughly clean and sanitize the deep fryer area and end of day today. Have pest control company conduct inspection and follow all the steps and recommendations of the pest control technician to immediately eliminate problems

Observation: Back door was wide open, no screen door. Staff indicated that it was opened to let air flow. This may create entry points for pests
Corrective Action(s): Door was closed at time of inspection. Back door needs to be closed to prevent pest entries. Advised manager to install a screen door if would like to have back door open.

Observation: Debris build up on the floor under the entire middle prep area

Corrective Action(s): Thoroughly clean and sanitize the area. Ensure to pay more attention in hard to reach areas when doing daily cleaning to maintain sanitation.

Observation: Ice cover lid missing, it was covered with a single use insulated/thermal bag as its lid, and was sticky
Corrective Action(s): Manager is looking for a new ice machine as the lid was not able to be fixed. Change the thermal bag covering the ice machine everyday with a new one as it cannot be cleaned and sanitized. This is only a temporary solution, ensure a new machine is purchased ASAP

Hand sinks stocked with hot and cold running water, soap and paper towel
All coolers <4C, all freezers at adequate temp
Low temp dishwasher had a chlorine residual at >50ppm at plate level after final rinse.(Ecolab is coming today)
General sanitation is good, minor attention need in the hard to reach areas mentioned above
