Observation (CORRECTED DURING INSPECTION): Quat sanitizer buckets were tested to be at 50 ppm only.
Corrective Action(s): Ensure to change sanitizer solution and wiping cloths in all buckets every 2 hours at a minimum (or sooner if solution becomes visibly dirty/cloudy). New solution mixed at time of inspection; 200 pppm Quats detected.

Observation (CORRECTED DURING INSPECTION): Items stored in front of designated hand washing sinks.
Corrective Action(s): All hand sinks must be easily accessible for hand washing. Do not store anything in front of hand sinks, as this blocks access to hand sinks. Corrected at time of inspection.

Observation: Uncovered bin of raw breaded chicken stored in freezer next to uncovered tub of ice cream.
Corrective Action(s): Repeat violation. As previously discussed, ensure all food items are properly covered to prevent potential contamination.

Comments

- Hand sinks were properly supplied with hot and cold running water, liquid soap, and paper towels
- High-temperature dishwasher reached 73.6C at the dish surface during rinse cycle - good.
- All coolers were measured to be at 4C or colder
- All freezers were measured to be at -18C or colder
- All hot held items were held at 60C or hotter
- Dipper well was in use for ice cream scoops
- Ice machine maintained in sanitary condition
- Batter/breading for chicken next to sauces was covered. *Note: The sauces in bottles should be covered, such that raw chicken juices and/or batter does not splash into the sauces.
- Dry storage areas satisfactory
- Reminder to empty mop bucket at the end of each day
- General sanitation satisfactory. Reminder to thoroughly clean all hard to reach areas (i.e., floors around mop sink, three-compartment sink, under all equipment and shelving) at least once a week.
- No signs of pest activity noted at time of inspection
