Corrective Action(s): Clean all areas of droppings. Ask pest control for cleaning advice, or use 1 part bleach : 9 part water to soak area before wiping. Do not vacuum or sweep.

Observation: 1. *REPEAT* (Since April 2023) Heavy build up of grease observed in following areas
- Range hood (canopy and filter)
- Under fryer
- Inside fryer (behind cabinet door)
- Under/behind 4 element burner

Staff stated it was cleaned every 3 weeks (previously stated it was 2 weeks)

2. *REPEAT* (Since September 2023) Floor of walk-in cooler observed to be wet. Water appears to be from thawing fish on shelving (no receptacle to catch / drain water from thawed fish.

3. *REPEAT* (Since September 2023) Dirty/Greasy foam observed by floor drain under preparation table and behind oven. Staff stated foam was from self-cleaning process of oven. Stated they are working with plumber to assess issue with plumbing lines.
Corrective Action(s): 1. Immediately create a cleaning schedule. This should detail what equipment needs cleaning, how often the equipment needs to be cleaned, and who cleaned it.
