Met with owner and we discussed the following: - daily temp logs - available/ keep them up to date ( record of the temperature readings for some dates are missing ) - at least one person available with FS lev 1 training per shift - all food is coming from the approved supplier - food in the walk in cooler - covered and protected - low temp dishwasher - supplied with chlorine solution at the final rinse and it is measured at 100ppm. Need your attention: - food handlers in the kitchen need to wear protective clothing ( aprons or uniforms ) - ice machine - to be cleaned and sanitized - walk in cooler - vent screen required cleaning
