Observation:
Inside of milk cooler (at front) has dried milk and mould at the back of the cooler.
Correction:
Clean inside of the milk cooler. Ensure to follow your sanitation plan for cleaning inside all cold holding equipment.

Follow-up Inspection:
Cleaning has been done inside milk cooler.
Hot holding for both gravy pots and all chicken products maintained at or above 60 degrees Celsius (140 degrees Fahrenheit).
Technician had come in to service the walk-in freezer.
Temperature of walk-in freezer at the time of inspection = -18 degrees Celsius (0 degrees Fahrenheit). Note: thermometers present in the walk-in freezer measure a more accurate temperature rather than the temperature dial outside of the walk-in freezer door.

Facility violated Correction Order issued on November 28, 2022 as:
1. Products (patties - e.g. beef, fish, chicken, veggie) stored in the walk-in freezer at the time of inspection have been re-frozen.
2. New frozen products have been stored in the walk-in freezer without health approval from a Health Inspector of the Fraser Health Authority.

Burger King's Operations Manual reviewed by Health Inspector and Manager at the time of inspection. As per the manual, if there is a problem with the walk-in freezer and the air temperature is above 20 F (-7C), but product temperatures are at or below 40F (4C),
Potentially hazardous foods from the walk-in freezer must be been placed in an alternative frozen compartment for a maximum of 24 hours, and then discarded after.
Thawed products are not to be refrozen.

Health Inspector spoke on the phone with the District Manager of the Burger King at the time of inspection and discussed Correction Order and Burger King's Operations Manual regarding walk-in freezer problems.
Staff proceeded to separate which frozen products were delivered today, and mark which products were present in the freezer before the delivery. All products that had been re-frozen are marked as "Do Not Use".
As the dumpster at the facility will overfill, the District Manager requested to take the Do Not Use products to another bigger organic dumpster by tomorrow morning.
District Manager will personally come to the facility and ensure any products that have been re-frozen are discarded.
Ensure staff maintain accurate temperature logs to monitor if the cold holding equipment is functioning properly.

Frozen products received today may now be stored in the walk-in freezer as the freezer temperature meets health requirements.
Correction Order will be rescinded after confirmation that the re-frozen products have been discarded.

Operator signature not required due to the COVID-19 Pandemic.
